Sheet-Pan Hot Honey Chicken with Sweet Potatoes, Jalapeños & Feta

This one turned out really good, but there are definitely a few things I’d change next time. It wasn’t nearly as spicy as I wanted, and it definitely needed more hot honey. I used bottled hot honey this time, but next time I think I’ll make my own so I can really control the heat. The sweet potatoes were probably the star of the dish—they were cooked perfectly, with great caramelization on the outside while staying soft inside. The chicken ended up a little overdone, although it was still tasty with the hot honey, feta, jalapeños, and lime. Next time I’ll probably cook the chicken separately from the vegetables so I can pull it as soon as it’s done without sacrificing that perfect roast on the sweet potatoes. Overall, though, this was a really good combination and definitely one worth making again.

Sheet-Pan Hot Honey Chicken with Sweet Potatoes, Jalapeños & Feta

Ingredients

Chicken & vegetables

  • 1½ –2 lb boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 large sweet potatoes peeled and cut into ¾-inch cubes
  • 2 jalapeños sliced into rounds
  • 1 medium red onion cut into chunks
  • 3 tbsp olive oil divided
  • 1½ tsp smoked paprika
  • 1½ tsp garlic powder
  • 1 tsp ground cumin
  • 1¼ tsp kosher salt
  • ½ tsp freshly ground black pepper

Hot honey glaze

  • ⅓ cup bottled hot honey plus more for finishing
  • 1½ tbsp butter melted
  • Juice of ½ lime

Finish

  • ½ cup crumbled feta
  • Remaining ½ lime
  • ¼ –½ cup chopped fresh cilantro

Instructions

Preheat the pan

  • Heat the oven to 425°F.
  • Put a large rimmed sheet pan in the oven while it preheats. Starting with a hot pan helps brown the sweet potatoes instead of steaming them.

Start the sweet potatoes

  • In a large bowl, toss the sweet potatoes and red onion with:
  • 2 tbsp olive oil
  • ¾ tsp smoked paprika
  • ¾ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • Carefully remove the hot sheet pan and spread the vegetables out in a single layer.
  • Roast for 18–20 minutes, stirring once about halfway through.

Season the chicken

  • While the potatoes cook, toss the cubed chicken with:
  • 1 tbsp olive oil
  • Remaining ¾ tsp smoked paprika
  • Remaining ¾ tsp garlic powder
  • Remaining ½ tsp cumin
  • Remaining ¾ tsp kosher salt
  • Remaining ¼ tsp black pepper
  • Let it sit while the potatoes finish their initial roast.

Make the hot honey glaze

  • Mix together:
  • ⅓ cup bottled hot honey
  • 1½ tbsp melted butter
  • Juice of ½ lime
  • The butter helps the hot honey coat the chicken instead of just running onto the sheet pan, and the lime cuts through the sweetness.

Add the chicken and jalapeños

  • After the sweet potatoes have roasted for 18–20 minutes, remove the pan.
  • Stir the potatoes and onions, then add the seasoned chicken and sliced jalapeños.
  • Spread everything out. You want some breathing room between the chicken pieces so they roast rather than steam.
  • Return to the oven for 6–7 minutes.

Add the hot honey

  • Remove the pan and stir the chicken and vegetables.
  • Drizzle about ⅔ of the hot honey mixture over the chicken. Toss the chicken lightly to coat.
  • Return to the oven for another 4–6 minutes, until the chicken reaches 160–165°F internally.
  • Because the chicken is cubed breast meat, don't keep roasting it once it's done.

Caramelize

  • Turn the oven to broil.
  • Drizzle or brush a little more of the hot honey mixture over the chicken.
  • Broil for 1–2 minutes, watching it closely. You just want some browned, sticky edges on the chicken, jalapeños, and sweet potatoes.

Finish with feta

  • As soon as the pan comes out:
  • Squeeze the remaining ½ lime over everything. Drizzle with the remaining hot honey glaze and a little extra bottled hot honey if you want it sweeter/spicier.
  • Scatter ½ cup crumbled feta over the entire pan and finish with chopped cilantro.
  • The feta should go on after cooking so it stays creamy and salty against the sticky hot honey chicken.
  • Serve immediately.
