Nasi goreng is simple on paper — fried rice with sweet soy and chili — but the difference between average and proper comes down to technique. This version builds flavor in layers: a reduced tomato–chili sambal for depth, chicken seared hard before the rice ever hits the pan, and a sweet-savory glaze that caramelizes instead of steaming. Finished with a crispy-edge egg and fresh garnish, this is Indonesian street-style fried rice done right at home.
