Raspberry Mint Lemonade — Fresh, Simple, and Kid-Approved

This one started with Tommy asking if we could make a cooking video for lemonade and noodles for dinner. I’ll admit—I was too lazy to film the noodles part, but the lemonade came out too good not to share. It’s technically a summer drink, but we made it in the middle of fall — and it’s still just as delicious. Fresh-squeezed lemons, raspberries, and a little mint straight from the SmekerBuilt kitchen.

Gourmet Lemonade

Ingredients

  • 1 cup fresh lemon juice about 5–6 lemons
  • ¾ cup sugar
  • 4 cups cold filtered water
  • 1/4 cup fresh raspberries plus extra for garnish
  • 8 –10 fresh mint leaves
  • 1 tsp pure vanilla extract
  • A pinch of sea salt
  • Ice to serve

Instructions

Make the syrup

  • In a small saucepan, combine ½ cup water, sugar, and raspberries.
  • Simmer gently for 3–4 minutes until the raspberries break down and the sugar dissolves.
  • Add the vanilla and pinch of salt, then strain through a fine sieve (press out the juice).
  • Let cool slightly.

Combine

  • In a large pitcher, stir together lemon juice, the cooled raspberry syrup, mint leaves, and remaining cold water.
  • Lightly muddle the mint with a spoon to release flavor (don’t shred it).

Chill & Serve

  • Refrigerate for 30–60 minutes to let the flavors mingle.
  • Serve over ice with fresh raspberries and mint sprigs on top.
