Shortcut One-Pot Sausage Bolognese

A shortcut bolognese made in one pot, with Italian sausage and the pasta cooked right in the sauce. The food processor handled the vegetables, so there was minimal chopping, and with just one pot plus the processor, cleanup was a breeze. It made 6 servings. I wanted a little more spice, so I added some crushed red pepper and topped it with fresh basil, and it was 100. Super easy and tasty. Inspired by a reel from Here’s Your Bite.

  • 1-2 carrots cut into chunks
  • Olive oil
  • 1 lb Italian sausage mild or hot, casings removed
  • 2-3 tbsp tomato paste
  • 2-3 tbsp minced garlic or to taste
  • 1/4-1/2 cup red wine
  • 1 jar (24 oz) marinara
  • 3-4 cups beef or chicken broth plus extra on hand
  • 1 Parmesan rind
  • 1 bay leaf
  • 1 lb lumache pasta medium shells or rigatoni also work
  • 1 tsp Calabrian chili paste optional; skip it with hot sausage
  • About 1/4 cup cream or milk
  • 1 cup grated Parmesan plus more for serving
  • 2 pats cold butter
  • Red pepper flakes to taste (optional)
  • Fresh basil for garnish (optional)
  • Salt and pepper

Instructions

  • Pulse the onion, celery, and carrot in a food processor until very fine.
  • Heat a drizzle of olive oil in a Dutch oven over medium-high.
  • Add the vegetables with a pinch of salt and pepper. Cook until they're soft and most of the moisture is gone, 8–10 minutes.
  • Add the sausage and brown it, breaking it into small crumbles. Go light on the salt.
  • Stir in the tomato paste and let it darken for 1–2 minutes. Add the garlic, chili paste, and red pepper flakes, and stir for 30 seconds.
  • Pour in the wine, scrape up the browned bits, and let it reduce for a few minutes.
  • Add the marinara, 3 cups of broth, the Parmesan rind, and the bay leaf. Bring it to a simmer.
  • Stir in the dry pasta, cover, and simmer on medium-low until al dente, about 12–15 minutes. Stir every few minutes, and add a splash of broth whenever it gets thick.
  • Take the pot off the heat and remove the rind and bay leaf. Stir in the cream, Parmesan, and butter until glossy.
  • Season to taste, and serve with extra Parmesan and fresh basil.
