Thereβs a big difference between throwing ingredients into a pot and actually building flavor layer by layer. This jollof rice started with a fully roasted base of tomatoes, red peppers, habaneros, garlic, red onion, and fresh thyme to create a deeper, smokier flavor profile than the standard approach. From there, caramelized onions, fried tomato paste, bloomed spices, and properly seared chicken thighs turned it into one of those meals that tastes like it cooked all day.
The final touch was folding butter, reserved onions, and fresh tomatoes into the rice right before serving, then pairing it with fried plantains for that sweet-and-savory contrast that makes the whole plate work.
